Gramma Diane’s Harvest Pumpkin Pie

Ingredients

  • Pastry for a 9” pie (raw)
  • 2 Eggs
  • 2 cups of pumpkin puree
  • 3/4 cup of packed brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/2 tsp allspice
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 and 1/3 cups of light cream (10%)
  • whipped cream for topping

Directions

  1. Preheat oven to 425 degrees Fahrenheit.
  2. Beat eggs lightly then beat in pumpkin puree, sugar, spices, salt and cream.
  3. Pour into prepared pie shell.
  4. Bake pie in preheated oven for 15 minutes.
  5. Reduce heat to 350 degrees Fahrenheit and bake the pie for another 45 minutes (or until tested inserted in centre comes out clean)
  6. Let cool and serve with whipped cream.
