Spiced Apple Muffins

Ingredients

  • 2 cups all purpose flour
  • 3 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1 cup peeled and diced Cortland apple
  • 1 egg lightly beaten
  • 1 cup milk
  • 1/3 cup melted butter

Toping

  • 2 tbsp brown sugar
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon

Directions

  1. Preheat oven to 400 degrees F.
  2. Mix flour, baking powder, salt and sugar in a bowl.
  3. Add diced apple
  4. Combine egg and milk, add to flour mixture
  5. Mix in melted butter and stir until completely integrated.
  6. Spoon into muffin tins and sprinkle with topping.
  7. Bake in preheated oven for 15-20 minutes or until golden brown
